A tiny bit over the medium-rare to medium I prefer, but with beef of that quality it really doesn't matter.

I bought these at my local shopping center and it worked out at @ 600 Baht a steak.
i forgot to put up pics of a few extras like sweet potato chips, fried onions and "Sweet baby Ray's BBQ sauce" , which is the only good thing to ever come out of the US.

since arriving back in OZ, the bride has developed a steak addiction and a few of her friends are always up for a BBQ if i cook these steaks, it getting expensive, but it is interesting to watch a Thai eat a good steak, they suddenly see that the big dumb white guy is onto something.

I think that might have needed a little more of a rest before plating.

I've seen more marbling in a wooden Isaan hut.

This thread should be renamed. It's certainly not steaks I am seeing posted here.

Perhaps the TD sad lumps of overcooked or undercooked bargain basement meat thread.

The art of cooking steak is not taking the piss out of a cheaper quality rump, but how to help enhance the flavours. It's all very well commenting about marbling, but not all of us can afford to waste good money on a Wagyu (going to be 100-200 quid for that size steak). Sure as hell the likes of Chitty and others have more pressing commitments for their hard earned cash than on an expensive piece of steak.

Beef in the UK and in Europe is not quite so cheap as it is in the USA.

So rather than take the piss, how do you recommend cooking such a steak?

I would put it in a red wine based marinade for a couple of hours before drying off and frying and serve with a mushroom and red wine jus. You can cook it rare to medium and leave it to rest while the jus is being prepared. Serve with some green beans and new potatoes and you have yourself a wonderful meal.

Let it come up to room temp.

Give it some 'ommer' to tenderise.

    S&P

Numpt covered the need to let it rest already.

Then, that disgusting looking gunk underneath it - skip that.

    Sorted.

Not consider it as a steak.

Slice it mm thin. Millimeter, not Mazza Monroe. Prep it the same as a Chinky resto and stir it fry, probably as a black bean sauce with veg, or stir fried noodles. There's no point having such a thing as a 'steak'.

But sliced thinner, with an extra few hours in the baking soda.

Not in mine, either, nor anyone who appreciates a nice cut of beef. But do carry on with your shoe leather. Maybe pork chops are more up your alley.

So do suggest a recipe for that "cut" of beef.

Or do you bin it over there ?
