    There's been plenty of bbq...

Here's a bit of a grill up last weekend.

Char some veggies to make a salad with. Skin, chop into small pieces and a twist of lemon, salt and pepper.

Maybe relax after you take the sausages off the BBQ. Save them from being turned into coal.

Today being a Friday it as good as any to fire up the Q again. I like these coconut coals, they burn hot, burn for hours and are relatively smokeless.

The BBQing, Grillin, Smoking Mega Thread-whatsapp-image-2022-04-15-8-a

As mentioned before I use a chimney to get them started, burn them until the fire starts creeping to the top. And then ready to place on the Q.

Australian Short Ribs. These didnt need any trimming.

Add a rub, this time I added coffee into the rub.

Halfway through the cook. The smell is sensational.

You cannot Q without a drink, so G&Ts it was.

The BBQing, Grillin, Smoking Mega Thread-whatsapp-image-2022-04-15-4-a

    Finally, the finished product.

A mate's birthday yesterday, so bought this lovely piece of meat. Some lovely marbling.

Best to add a dry rub to this baby. Salt, black pepper, garlic powder, coriander seeds, dried chilli, cumin, fennel seeds, celery seeds and fresh coffee. Grind it then rub it and leave for a few hours.

Normally I'd reverse sear this using the webber, but we only had an open topped fire pit, so necessity being the mother of invention wrapped the steak in foil and heated bother sides for about 30 minutes each.

    Cans for size comparision.

The BBQing, Grillin, Smoking Mega Thread-whatsapp-image-2022-04-23-3-a

Kids had a swim while waiting. Then unwarp the foil, and sear each side for another 10-15 minutes each. Perhaps I should have added more coals for a bit more heat and flame at this stage, but on balance it was fine. Crusted nicely.

Rested the steak, then carved it up. Didnt have time for any photos. Everyone was happy. Including the dog.

Medium rare. The fat pocket is the best bit!

But how's these then? These were yesterday. A bit more traditional. Beef steaks, lamb steaks, sausages.

Are you the only one that uses the pool area? Always seems empty. Meat looks great.

This was midday, most Asians prefer to swim at 7:00am and 5:00pm to avoid the sun.
