    The perfect burger

Seems there are a lot of differing opinions about what makes up a good burger. Interestingly enough, us Yanks seem closer to the Brits on the types of burgers we like. The Aussies are the outliers in this equation with their love of beetroot, egg and pineapple. So what really makes a good burger?

    Gordon has his take...

Key point there to notice as a chef he calls it a grill, not a BBQ.

For me its evening snubs, and its proved challenging to marry a meal with a beer in the same establishment but i have suceeded.

As far as a burger goes its less is more imo and its all about the different cuts used in the mince with enough fat, whatever else you add is just garnish

Angus beef medium rare, blue cheese, tomato, lettuce, ketchup, and mustard on a nice fresh bun.

Had this planned for my dinner tonight but lost the burger buns somewhere between the cashier and home.

Could not agree more. Tonight, Ozzie imported beef with a nice fat content, thinly slice sweet onion and a slice of cheddar from the brick. Lightly toasted bun with some barbecue sauce I like and boom its done. Often add lettuce and tomato but not tonight. Just good ground beef is the key.

It's got on it whatever you want on it at the time, and is subject to change. I don't think it's possible to say what makes a good burger but personally, I like basic ingredients of a juicy patty, cheese, onion, BLT, and BBQ sauce. But the chili burgers in Houston after a big night on the drink were next level good, and I'm a fan of these spicy fried chicken & cheese burgers everyone seems to be making now. So I dunno, there's no right or wrong in this..

As headworx says, whatever tickles your fancy at the moment.

Has anyone here had a satay burger? Now there's some messy goodness.

The cooking is also important. I like mine with some char / crunchy bits and slightly rare in the middle but only if you use a good steak in the mince mix. Kin hell, after just eating spicy Thai for the last week this thread is crucifying me.

They are marvellous, aren't they? Exactly what nammers is describing below with the char.

I've got to admit, I do agree. There's a sweet spot between being a beefy burger and ridiculous. I've also swung towards to smash burger side of the fence.

And a good sear on the burger ..... the Millard effect is what first hits the palate.

A nice beef pattie with 20% fat content and great bread rolls is the secrete.

Then you can add what you like but my preferred additions are fried onions and fresh tomato slices that don't mask the taste of the beef.

    Purfect!

Agreed ... it's just 'look at me' food created to market the company or for that pretty photo.

    No thanks.

That 'Late Night Smashed Cheeseburger' looked the go though. Not sure about the pickles.
