    BG, you never told me you didn't like black-eyed peas.
    Thanks, CSFF. I did all of that and it just tasted bland. I gave half to my neighbours. FF says I gotta eat whatever I got left. (ie, eat your mistakes)

    Jet,

    You said you added stock, celery,etc, etc.....so you really didn't do that.

    Soak the beans overnight. Put the beans in fresh water to cover them by about an inch.

    Add the pork, salt and pepper and let it cook until the beans are almost mush. Less seasoning is good at this point...let the pork and beans make their sweet, sweet love together. A well cooked pot of blackeyed peas should yield almost a gravy at the end of their cooking.
