Get rid of the celery - it sucks.

Soak the beans overnight. Put the beans in fresh water to cover them by about an inch.
Add the pork, salt and pepper and let it cook until the beans are almost mush. Less seasoning is good at this point...let the pork and beans make their sweet, sweet love together. A well cooked pot of blackeyed peas should yield almost a gravy at the end of their cooking.
