    PAG's Chicken Cordon Bleu

    M'Sahib got a couple of nice chicken breast fillets yesterday as well as some ham and cheese, so thought I would try something different. Never made cordon bleu before, and usually have it with pork when eating out. Pretty simple really, make a pocket in the meat and stuff cheese and ham into it.




    This is then covered in a mix of egg and flour, before wiping in breadcrumbs. I should really have put a few slices of bread in a blender to make the breadcrumbs as the one's M'Sahib keeps in stock are a bit on the large side. I baked the chicken rather than frying it, so baked the breadcrums sprayed with oil in the oven before using them.

    Sides were roast potatoes, and honey and garlic butter roasted carrots.







    To finish it off, made a mustard and parmesan sauce.





    Chicken was lovely and moist and well cooked which was a relief as the breast was quite large.

    What temp and duration for the oven?

    180C for 30 minutes (it's a fan oven, so slightly longer if normal convection). Recipe I used: Chicken Cordon Bleu | RecipeTin Eats

    No, essentially the same as baking in an oven. Spray the breadcrumbs with oil and put in the fryer for a few minutes to brown before hand. When you've made up the meat and added the crumbs, spray with a little more oil.

    Looks great and one of my favorites, i have not made in a while. I should put it back on cooking Repertoire
    I make it a little different but yours looks great also.
    I slice the chicken Brest thin and then I put it between two pieces of plastic food wrap and pound it with a dough roller to make it even thinner. Then I layer ham and cheese roll it and hold it together with a tooth pick. Then I bread it like you and bake it.
    Perhaps next time I will try it your way.

    If you pound the chicken fillet thinner, you could roll it up and fix with tooth picks (I'll try that myself next time). Like this (not my photo).
