    PAG's Spiced Apple and Raisin Pie with English Custard

    Probably the easiest apple pie you can make. First assemble the makings.



    Set to with the pastry. I'm using a 50/50 mix of butter and lard.



    The shortening rubbed in to form breadcrumbs.



    Gradually add cold water a spoonful at a time and bring together with a knife. Finish with your hands, rolling into a ball then wrapped in clingfilm and in the fridge for half an hour.



    Whilst that's going on, core and slice the apples, put in a bowl and add the raisins. Mix in some cinnamon powder, clove powder, and grated nutmeg. Also add some brown sugar.



    Roll out the pastry into a very rough circle. Brush some beaten egg yolk on the bottom, then sprinkle some semolina powder on top of that. Add the apple/raisin mix, piled in the centre. The pastry is just pulled over from the edges, leaving an open area at the top. The pastry is then brushed with egg white, and then some brown sugar sprinkled over it. Then it's in the oven for about half an hour.



    Time for the custard. Head some cream in a saucepan to just below simmering. In a bowl, beat egg yolks, brown sugar, some vanilla essence and a spoonful of cornflour.

    Add the hot cream to the bowl and mix.



    Return everything to the saucepan, and heat, whisking all the time, until the custard thickens.



    Take the pie from the oven and allow to cool for a few minutes.
