For those unfamiliar, Spotted Dick is an old English pudding that over recent years has gone out of fashion, possibly due to its non PC name. It's also a bit of a pain in the ass to make, so I've found.
Anyway, assemble the makings, including for what will be the accompanying custard.
Started by peeling and roughly chopping a large apple, and added raisins, some dark brown sugar, and the zest of a lemon.
The pastry for the pudding is a mix of self raising flour, vegetable suet, fresh breadcrumbs, which is mixed together with some diluted milk.
The dough is kneading to mix everything, then rolled out to make a rectangle.
The fruit mix is then spread over the top.
Then it's rolled up which is a real pain.
The roll is then wrapped in aluminium foil and put in a steamer for a couple of hours. Plenty of time to make the custard.
Whipping cream in a saucepan being heated until just below simmering, a bowl with egg yolks, brown sugar and vanilla essence which has been whisked together.
Gradually add the hot cream to the egg mix bowl whilst continuing to whisk.
When all the cream has been added, return everything to the saucepan and bring to the boil under a low heat to thicken the custard.
Time to remove the pudding from the steamer and foil. The pastry has a few splits in it, but won't affect the eating.
The flavours brought back memories of school dinners for sure. It's not a 'wow' kind of dessert, and though we enjoyed it, I don't think the recipe is going to be pulled out again any time soon.
