    Slice the Madeira sponge into the bowl.

    Pour custard on top.

    Microwave.

    Purple pudding tonight from Miss Lusty in the form of a Filipino bakery concoction known as an Ensamada

    The only sweet pudding I have ever had which had cheese grated on top. Yes, that is cheese!

    Miss Lusty Luzon came over to see the nearly full moon and to celebrate her birthday.

    So I got some imported Tunnocks Teacakes for pudding as a special treat and they had the miraculous effect of being the first thing that I have been able to taste in over a week.

    Well, you can. Have you ever tried a teacake with custard?

    Last night we had half a doughnut with hot, homemade custard... yes this dieting is as simple as that. Half a doughnut, half the calories.

    And half a healthy banana as well to give the pudding that Thai slant.



    Custard is like bacon, it makes every meal better!

    Nutmeg or cinnamon? Sugar and butter? Jam is optional, I like blackcurrant or raspberry.

    Rice pudding is deceptively simple on paper. Like the dry martini, not at all complicated until you make it.

    You'll find numerous recipes on the Internet, too many frankly. I have made it here with Isan sticky rice/supermarket milk/refined sugar using the ratios 1:6:0.5 and it has come out okay.

    The most difficult part will be getting a TD-quality food picture. It probably isn't the most photogenic of dishes.

    My mum gave me her recipe... there will be nothing fancy like nutmeg or cinnamon but yes, you are correct I do need to add some sugar.

    Every single Norwegian boat I have ever worked on has dished up rice pudding every Saturday lunchtime... and these guys coat it in butter and then add a layer of cinnamon... revolting for me. The Nogs look on in amazement as I add some milk and a dollop of jam.

    I'll take a look in the back of the fridge for some jam... there's usually some old stuff lurking behind the wife's many bowls of evil-smelling concoctions.

    And as for the photo... I may use the 'Shutree bird photo method' and just take a pic of an empty bowl. You can imagine the rice pudding.

    I promised the littl'un a cooking session today but due to quite a major hangover wasn't really up to the rigours of a proper rice pudding.

    But this has been on my bucket list for some time.

    And no, Reg Dangle, that's not only a norvern sex aid, it's also a whisk.



    The daughter started whisking but she was completely useless; but to be honest despite costing 19 quid it is a rubbish whisk and I wish instead of buying it analoguely in Shepton Mallet last year I had bought it online, so at least I could leave a shitty review. The bloody thing just kept jamming.



    But eventually 'Layer 1' was ready. The recipe called for 4 'dessert glasses' but we don't seem to own such a thing, so we used these little bowls with handles that I found. We started with 4 bowls but there wasn't enough 'stuff'' so I reduced it to 3. Obviously there will be a problem distributing 3 puddings amongst 2 people so maybe the gardener will get an unexpected bonus tomorrow... he's been working hard lately.



    And so on to 'Layer 2'.

    I took over the whisking with this shitty whisker but it took a while. It really pisses me off to pay 19 quid for a simple kitchen appliance that just doesn't work.

    Rip off Britain, Boris fukking Johnston and Brexit... it never ends.



    'Layer 2' finished.



    I took over for the topping and finally got the hang of this useless 19 quid whisker. I managed to get some speed going.



    And valla... topping applied...

    They say, 'the proof of the pudding is in the eating'... ad I can't wait. These babies went straight into the fridge to await pudding time tonight. All I ave to do is apply the sprinkles before eating.
