    The daughter goes back to school in Monday after her long summer holiday so I thought I'd spoil her with a trip to Svensons.

    I had the Chocko Locko Ding Dong, or some such stupid name, and the daughter went for this green-coloured shite... Mocha?... Macha? whatever it is she seems to love it so fair enough. This stuff didn't exist when I were a boy.



    At the age of 12 the daughter is finally becoming useful and she made me this tonight... two bananas, so two of my five a day covered on one fell swoop!

    Something for the weekend? On this occasion, a Thai coconut and pumpkin pie. I'd been meaning to have a crack at a pumpkin pie for some time, and opted for this Thai influenced one.

    Started off with the pastry, a mix of mainly all purpose flour and some rice flour. Room temperature butter rubbed in to form a breadcrumb like mix.



    A beaten egg yolk and some cold water added to the mix, kneaded into a smooth dough, then wrapped in cling film and into the fridge for 30 minutes.



    Started with the pie filling, firstly bringing some coconut milk and a drop of vanilla essence to a rolling boil, and allowing to reduce to half. Then adding palm sugar and a pinch of salt, simmering until all the sugar had melted.



    I'd roasted half of a medium size pumpkin, scraped out the flesh from the skin, and with a hand blender, turned into a puree. This went into the coconut and sugar, and when thoroughly mixed, three eggs were added.

    The dough out of the fridge and rolled ready for the pie dish.



    The pie dish lined, and pricked with a fork on the bottom to prevent air pockets.



    A tip. When you trim the dough, what I do is form the off cuts into a single piece, and make into small squares to bake separately. These make great 'biscuits' for cheese or any other spread.





    Going to blind bake the pastry case first of all, so lined with some crumpled baking paper, with baking beads for weight on top.



    20 minutes in the oven, then another 5 minutes in there with the paper and beads removed.

    The filling then put into the case, and the pie baked for around an hour, before being allowed to cool for a couple of hours.



    A mix of roasted and non roasted coconut flakes scattered over the top.



    Thought the pumpkin would make the filling quite dense, but no, almost light and smooth mousse like. Whipped up some cream, adding some coconut cream, caster sugar and vanilla essence. Great with an afternoon coffee.

    At weekends, my lovely wife has taken to regular trips 'up country' to visit the less 'cosmopolitan' branch of her family. I mean, less cosmopolitan than Korat... these bug eating, missing links should probably be exhibits at the Korat dinosaur museum, but I hold my thoughts and let her be.

    To be honest, at first these constant trips away bothered me, but as our marriage has evolved I now positively encourage her absence... things are easier this way and the daughter and I enjoy these peaceful weekends.

    But, the wife has got in the habit of bringing back these purple-skinned sweet potatoes from 'up country', and to keep the peace I've always said that they taste 'nice'. I never learn... once I say something tastes 'nice' I am plagued by it... be it pig intestine soup, chicken's feet or salty fish. So this week I finally told the wife that these purple sweet potatoes just taste like shit and have been ruining every meal we've had for several weeks. All we want is normal potatoes.

    So anyway, this week the wife made this sweet potato in coconut sauce kind of pudding. When I first met my darling wife in Perth, she was living with this lesbian Filipina chick, and her housemate 'Melita' made this dessert with sweet potatoes/tarro in a kind of coconut sauce... and the wife nailed it this week!

    A minute in the microwave, and this is delicious! I may try it with a dollop of jam tomorrow..

    My eyes could not believe their ears when they cracked sight of a trifle in Coles.

    The last one so it had to be mine. Over a year since I last saw one in Coles.

    Tiny bit disappointing since it does not seem to have any jelly in the sponge. Also they have tried to make it exotic by using passion fruit instead of rasperry. Sound cool but is a bit bollix when they leave the fukkin seeds in it.

    Have they not go the technology to remove those fukkin seeds from anything with passion fruit in it. Even the fukkin yoghurt has got them.

    I'm not really one for sky-scraper burgers, 3 ft high piles of pancakes, mac & cheese or pizzas the size of bin lids, but I have to say that the Americans have got it spot on with pumpkin pie.

    This was my first attempt at cooking it, and also the first time I've ever eaten the stuff.



    I served it chilled from the fridge and paired up with coconut ice cream.



    Absolutely dee lishiarse.



    The daughter gave it 7 out of 10, which I'm taking as a 7.4.



    It was so good that I went back for seconds!
