    LT, our pies weighed in at 370g, 4.5" diameter.

    BLD, Apparently, You would need to be drinking 40 crates of beer a day to see a significant benefit of switching to lo-carb beer like SML. Stick to LEO and spend your savings on pies.

    Pie butties are quite common where I come from but I've never done it myself. Chip butties too. I once worked offshore with a right fat twat who claimed he was on a soup diet and sticking to it, only he would put a pie in the bowl first then fill it up with SCOTCH BROTH. I gave it a go and it was pretty good.

    PAG, your tins scare me, I want parallel walls on my pies.

    Pheonix, pies look good but I think I'd have went flakey for the things on the left.

    For anyone giving it a go, don't be scared of the hot water pastry, it's a doddle and no machinery required. You can substitute the lard for butter if you can't get any locally. If you have time and patience you can render your own lard. I've done this in the past by getting my staff to do it haha. Brush the pies with milk before the oven, not egg.

    ^^ Why milk and not egg Dirk? I tend to whisk a small egg and milk together to baste a pie because I can never decide which is best.

    I've always re-used foil pie cases from shop-bought pies when I've made a batch up, but they can be difficult to clean when the gravy spills over. A couple of weeks ago I discovered packs of pie cases in Makro. These are 4" diameter and perfect for my steak and kidney. They come in packs of 12 which I think were only about 200 Baht.

    Because that's what the YouTube Expert told me to do. Something about even browning.

    So I googled it...

    For a crisp crust with a matte, classic pie appearance, use just milk. Many biscuits and rolls are brushed with milk or buttermilk to give them that finishing touch. For a little more shine than an all-milk wash, but not as much as an egg wash, use heavy cream or half-and-half.

    The pie dishes that I ordered from the US just arrived. Not bad, 7 days from ordering to delivery. I must get into Makro and try and find the ones that Mendip got though.

    Sure is.

    We were trying to get the right size of tins for the pastry, so the ones that are in use are in between our smaller and larger ones. She picked them up the other day for 80bt each.

    The large tins are best for eating on a plate, the rest are good for eating on the fly.

    OK, PAG's first attempt at Scotch Pies. Get the operating theatre ready.



    Melt the lard in hot water.



    Pour into a large bowl containing the flower and mix all together.



    Knead the pastry on a floured surface to make sure everything is well mixed and divide into however many pies you're going to make (6 in this case).



    Roll out the portions, including leaving some off for the pastry top, put into lightly oiled tins, and put in the fridge to cool.



    Start the filling by frying some finely chopped onion along with some dried spices and some Mace.



    Mix this with the lamb in a bowl, adding a few spoons of lamb stock.



    Pack the meat into the pie cases.



    Put the lids on and trimmed inside the case slightly.



    Into the oven for 40 minutes.



    Allowed to cool and remove from tins.



    Nearly lunch time so had a couple. Realised that I'd forgotten to put some salt into the meat mixture, but otherwise tasted quite authentic.



    Brought yesterday's trifle out of the fridge, which was a good move. Being in the fridge overnight really solidified the custard, fruit and sponges, blending all the flavours together.

    Impressive PAG.

    For both Your pies and Mine, I'd like to see the walls higher than the lids, creating a wee bowl on top for sauce on the fly or gravy on the plate.

    In your case, you had it going on until you put the lids on, did you trim them? In my case, I packed them so tight they seem to have risen.

    Choking for a pie now.

    ^ Wow! Puts my little batch to shame.

    ^^ PAG, Makro always seems to have pigs kidneys. I'd prefer to use lamb kidneys but there's no chance of finding them here.
