    Mrs. Kerr’s Thai Sour and Spicy Shrimp

    Shrimp are dirt cheap in Thailand at the moment. Most Thai shrimp farms have timed their production to make sure they have enough to meet overseas demand associated with the upcoming Christmas/New Year and Chinese New Year periods, but are experiencing tough times at the moment due to the Chinese and Vietnamese out competing them on price. We have so much shrimp at home they are getting boring, so Mrs. Kerr has been busy devising new ways to cook them. This is her Thai sour and spicy shrimp.

    Preparing the Shrimp


    ^ Slice the suckers down the back and pull their poo vein out – stick a few toothpicks through the meat bit to hold them open


    ^ Steam the shrimp gently for about one beer so the meat is half cooked


    ^ Whack a load of garlic, chilli and lime juice all over the meat


    ^ Then put some chunks of orange or lime on top of the shrimp before putting them in a moderate oven for about two beers

    Fish Balls

    Mrs. Kerr recommends the trusty old fish ball to go with the shrimp. These are dead easy to make and if you do a few extra they make a great happy hour snack for the next few days. Just smash up some potatoes and mix it with a bit of fish and a few herbs and spices, roll it into small balls, coat with breadcrumbs, then bung them in some super hot oil.


    ^ Fish ball ingredients


    ^ Mix up all the bits and pieces


    ^ Coat in flower, then some egg, then breadcrumbs


    ^ Fry them for a few minutes before putting in the oven on moderate heat for about 2 beers

    The aromas these sour and spicy shrimp let off are friggin awesome and are the absolute friggin delish. Mrs. Kerr has perfected these for her new restaurant to open early next year, and she did the whole meal (less the grog) for 4 of us for 270 baht .


    ^ Serve it all up with leftover salad, beer, and a decent chardonnay


    ^ We washed this down with a bottle of South African plonk – worth giving a try if you see it in the supermarket

    Ok seem to have sorted out the minor little mishaps, wayne you should explain things a bit better so people can understand how to do this sort of cooking, I mean there's some real dumb people out there that don't understand how to do this cooking stuff, hell, even I once mixed the jam into a sponge cake mix before I put it in the oven, didn't realise that you baked it first and that and then sliced it and spread the jam on it, just goes to show how easy it is to make a mistake if the instructions aren't clear enough, anyway they have been salvaged and are much better than yours well apart from the color and shape that is.

    I think I forgot about putting the "crumbed" balls in the fridge for half an hour or so before frying ... something to remember for next time old chap .

    sheesh Wayne ! - I dunno what I miss more about my visits....... the "cultural experiences" or the sensational feeds at Chateau kerr !!

    - better put that on the repeat menu for the next visit - looks right up there with the pepper crab !!

    ............... - If you think the Thai shrimp farmers are struggling to move product; spare a thought for the poor Aussie wild catchers !! - I think Dr Jones is developing an ulcer !!
