    PAG's Chicago Style Pizza

    M'Sahib enjoys deep pan pizzas, so thought I'd rustle up a couple for us today.

    First off was making the base.



    After 'proving' for an hour and doubling in size, then rolled into a rough rectangle and spread with butter.



    Then, rolled up before cutting in half, making the two halves into balls, back into a bowl and in the fridge for an hour.





    Whilst it was having its second 'prove', made up the tomato sauce. Fried in butter some grated onion, dried oregano, dried chilli flakes and some chopped fresh tarragon. Then added a couple of tins of diced tomatoes, and some grated garlic. This then simmered for an hour.



    Started making up the pizzas.



    A liberal amount of shredded mozzarella in the base, along with some thinly sliced green pepper and mushrooms.



    Mine was getting some chorizo also.



    Then added the tomato sauce, and topped with some freshly grated parmesan.



    20 minutes in the oven, and ready to go.

    Not been out of the house for some while, M'Sahib's been doing all the shopping. Had to go to Phuket Immigration this morning as my visa extension had been approved so needed to get it put into my passport. Used the 'escape' to shop for the makings for the pizza afterwards.

    What I hadn't reckoned on was the queue at Immigration. The office that handles Marriage/Family extensions, Work Permits etc is normally quite quiet. There are separate offices (all in the same complex) for 90 day, Retirement extensions etc. The office that I had to go to is now doing 'Covid Extensions' and was packed. The office itself was full, and the queue led downstairs outside. Took me an hour to eventually get inside, and as it was just getting the stamp in the passport, was out again in 5 minutes.

    Looks great, It has inspired me to to make some.
    I have never made pizza with the cheese on the bottom and the tomato Sause on top. Interesting idea, I will try it.
    I use a 12" cast iron frying pan in the oven , It holds the heat better and makes for a crispy base without burning the top.
    The sooner you fall behind, the more time you have to catch up.

    Were they serving Pizza there?

    Plan was quick trip to Immigration for extension stamping then pizza ingredient shopping. M'Sahib stayed at home, so I'd sent her these photos as explanation that it wasn't going to be a quick visit.

    Agree cast iron pan is the way to go, and I do have a very good Lodge one. However, M'Sahib doesn't eat meat and wanted to try a vegan 'mock' mozzarella substitute which didn't appeal to me, hence two pizzas. The Pyrex pie dishes are fine.

    Yes, she's a pescatarian. Inevitably when she cooks for me it's far too much so two days meals.
