    MM's Keto Treats

    I did some cooking most of the day today. Today is Day 4 for me on the Classic Keto diet, meaning high fat, low carb, and moderate protein diet.

    I found some great recipes I want to try and I made a few things today. I didn't take pics of the process, but I'll make the Cheesy bread again in the morning and I'll take pics of the process.


    Keto Cheese Bread (Absolutely delicious and quick)


    Cut is in slices of 8-10. This is my finished product. I'm making more tomorrow.

    Here is the recipe. I can show the steps tomorrow.


    Keto Cheese Bread

    Preheat oven to 350 degrees

    2 cups of Mozarella (fresh is best, grate your own)
    1.5 cups of parmesan (grate your own)
    2 eggs (whisked)
    Then add the cheese to the eggs and mix.
    Cover the a 11x7 pan with parchment paper
    Make a ball with the mix and transfer it into the pan
    spread it out evenly so it fits into the pan.
    Bake for 25 mins until the top is brown.

    Take it out, let it cool and then cut into strips. I dipped it into salsa. Yum!!!!

    I also made Snickerdoodle fat bombs today which are to die for! Not literally! I'll post them up and the recipe.

    Snickerdoodle Fat Bombs




    Ingredients

    4 oz cream cheese, softened
    4 tbsp unsalted butter, softened
    ¼ cup natural, creamy, no sugar added peanut butter or almond butter
    3 tbsp granulates Stevia or other low carb granulated sweetener to taste
    ½ tsp ground cinnamon
    ½ tsp vanilla extract
    For the coating:
    1 ½ tbsp granulated Stevia or other low carb granulated sweetener to taste
    1 tsp ground cinnamon

    Instructions



    1. Beat the cream cheese, butter, peanut butter and sweetener at medium speed with an electric mixer until creamy.
    2. Add the ground cinnamon and vanilla extract and beat until blended.
    3. Cover the dough and freeze for 30 minutes or until hard enough to form balls.
    4. Bring the dough out of the freezer and roll into balls about 1 tablespoon in size.
    5. Freeze the balls for 15 minutes.
    6. To make the coating, mix the ground cinnamon and sweetener in a small dish.
    7. Remove the balls from the freezer.
    8. Roll each ball in the cinnamon mixture.
    9. Keep the balls in an airtight container in the freezer until ready to serve

    I can show the steps for the bread later. The snickerdoodles I won't make for another week or so as I made a double batch in my freezer.

    Thanks, Ive done Keto before and it is great. I believe I'm almost in ketosis now. I fasted last night (intermittent fasting) from 8pm-12pm.
    Once in ketosis your appetite is near existent and you feel great.

    This one is, ya plank. Called Keto cheese bread for a reason. 2 net carbs per two slices.

    ^Ya, I fasted for 16 hours, that is the fast they recommend to start out with, dingbat.

    I was looking for the bread also, but don't think there is any, basically a baked cheese and egg mix which is cut into 'fingers'. She needs to add some seasoning to it also. Not sure of the wisdom of dipping into salsa, depending on what's in that.

    Yes, I thought I had posted the ingredients, yes I forgot the spices.

    I added these spices into the mix.
    1/2 teaspon onion powder
    1/2 teaspon garlic powder
    1/2 teaspon italian spice.

    You can garnish with chives. These are like cheese sticks more than bread as they are pretty thin. Trust me they are delicious.

    That's inspired me. Now I can just tell M'Sahib that I'm going for a quick fast, when I nap on the sofa in the afternoon.

    No, it is 16 hours fasting. You don't eat after 8pm basically. Some people tend to eat late at night so if you fast you can't do that.
    Most people that know about Keto start off with this 16 hour fast. It is enough to help get you into ketosis and does your body good from the inside.

    Haha, well once you cut it into slices, you can dip it into some pizza sauce or salsa. I bought Newman's Own Medium salsa and dipped it into that. Newman's is low enough sugar so.. we also can't eat sugar with this keto lifestyle or very low sugar anyhow.
