    It's been some time since I made dumplings, but I've usually used ground chicken meat (instead of pork). I've been on a "less pork" diet for several years now. Then added chopped carrots or squash (depends on what I have), chopped firm tofu (if I feel like making a "less meat" version), soaked then chopped jelly fungus (the black ones) or shitake mushrooms, chopped coriander or fresh oregano leaves, onion, salt & pepper, fish sauce. Add an egg or 2, and a little flour. I don't have the proportions because it's mostly a guesstimate thing, but it usually turns out well. The ingredients may vary with what's available at the time.

    After mixing everything, put a spoonful in the dumpling wrapper (I use the square ones, store bought), then steam for ~20 minutes.

    Dipping sauce is usually soy sauce + lemon juice + chili flakes or powder (or fresh chili if I have them).

    Edit: that mix can also be used for spring rolls. Instead of using dumpling wrapper, I buy the spring roll wrapper. Wrap then fry.
