    ^Sounds nice and contender for TD curry of the year 2021.

    Pulling out the stops tonight, all from scratch.

    Heaps of wild garlic that I picked myself, about a dozen cloves of ordinary garlic, a Thai shallot and a red onion.

    500 grams of chicken that's been marinated in turmeric overnight, fried in a mixture of coconut oil and rhapseed oil.

    Sliced and diced then fried up together before adding the chopped tinned tomatoes , pepper and salt, curry and cumin powder..

    As a final touch, leave to simmer for an hour with some delicately placed soon to be Bombay potatoes.

    Shall be served on a bed of Basmati rice , sprinkled with untold fresh Corriander.

    You can read your fortune in the Jupiter swirls of my curries.

    They tell you how bumpy your life is going to be during the 2 weeks or so that it will take to eat this batch.

    This was 2 days ago and the omens are good. I had a beard at the time (now shaved off) and there is a guy with a Santa Claus beard dancing and throwing some shapes without a care in the world in this swirl so the fortune forecast is good unlike the weather forecast.

    Here's a tip. You can dry fry whole spice and grind. Never dry fry ground spice, mix it with some warm water and then add to the fried ingredients like oinon, ginger, garlic and Chilis.

    Unfortunately for me I was turned off curry after my first flight from Syd-BKK in 2002. I think it was because I bought the cheapest ticket I could get within 3 months. It was the pungent BO on the flight for 9 hours, anyone want to guess where the flight was headed to?
    I did learn from that experience, pay a little more for one hop flights and use Thai Air.
    With sadness I cannot stomach the smell of that style of food anymore, because the same BO smell is infused in it to me.
    I can still remember the Keen's in my cupboard next to pepper and salt, with a sad heart.

    Got a couple of M'Sahib's family staying with us for a few days, and I rashly promised them an Indian meal whilst here.

    Opted for a Rojan Gosh with Lamb shoulder, a prawn curry, Aloo Ghobi, spiced Basmati rice, and homemade garlic naans.

    Browned the lamb in batches, having trimmed most of the fat off the useable meat.



    End result.

    The prawn curry. Madhur Jaffrey calls it a 'Dark Prawn Curry'.



    Not made Naan's for a while.





    M'Sahib made up a green Mango salad as a side dish.



    Lunch is ready.

    Simples.... doesn't like you because you have a personality, a family and a carefree attitude whch he abhores, having sought respect above all else and a position where he can laude it over others.

    Snub... thinks all Brits are Chavs and feels that his inheritence qualifies him as a sucsess, the fact that he comes across as a teenager, low rent trailer trash only proves how much he needed the help.

    Lulu... well, he's just confused. Unsure where he belongs, anywhere except where his roots are it seems.

    Me...i just think two out of three of them are funny.
