    A Hearty Caprese Salad

    ...a caprese salad is usually mozzarella, tomatoes, a sprig of basil and a swirl of olive oil. I added a few culinary steroids on this take for dinner:

    beef tomatoes, mozzarella di bufala, avocado (all sliced and alternated around the plate), capers, kalamata olives, chopped spring onions, anchovies, basil from the balcony pot, salt and pepper...very satisfying...

    Beef tomatoes and anchovies are awful.

    The rest would be very nice with a well done steak and chips or perhaps a lasagne and chips.
    Still nevertheless, very photogenic.

    Looks great TC. Would happily scoff that, but for me at least, there's no need to overdo a caprese.

    Beef tomatoes, buffalo mozzarella, fresh basil, a spinkle of ground pepper and olive oil.

    Perfectimo.

    Too much but excess on the self indulgence front is scarcely new to you chaps.

    My Caprese is given more piquancy by the addition of a dressing incorporating olive oil, balsamic vinegar, a smidgin of french mustard and a sprinkle of sugar or a drop of honey.

    The addition of olives is fine but not as a separate ingredient but mashed up with capers and anchovies as a tapenade to be spread on toasted sourdough slices served as an accompaniment to the salad.

    But if anchovies are to make an appearance then I prefer to lay them on crusty bread that has been seared on a hot griddle but left to grow cold on which a clove of garlic has been very lightly scraped to leave the merest suggestion of its presence augmented by a few drops of the finest olive oil liberally seasoned by pepper. If the anchovies are preserved in olive oil in longer fillets then omit the drops of added oil.

    When interleaving the mozzarella and tomatoes with the basil one should always rip the leaves gently in order to release their fragrance. Laying them strewn on the top like you evidently have done is really for rabbits.

    Avocados are quite wrong for a Caprese. Their addition is a 'tricolore' salad to which a few basil leaves can be added but the star of the show is the balsamic dressing.

    Still, to each their own but adding onions, albeit chopped scallion, is a fucking travesty.

    I don't post photos, I am not a photo journalist, and I have never photographed a meal in my life and I'm certainly not going to start now. The trouble with you knuckle-dragging ditch diggers is that you have no fucking imagination.
