    PAG's Crab Cakes

    M'Sahib made an early morning visit to the fresh market in Phuket Town yesterday morning, returning with a wide variety of seafood, amongst which was a bag of crab meat. I never touch whole crab as though I enjoy the meat, I usually end up wearing most of it trying to get it out of the shell. Anyway, thoughts turned to how to get the best out of it, and I've always enjoyed crab cakes in restaurants, though never made them myself.

    Assembled the ingredients.



    A lot of fine chopping and mixing (the green beans were par boiled before adding to the mix).



    A couple of spoons of mayonaise to help bind the mix together, and ready to go.



    Looking good so far, about 5 minutes shallow fried each side.



    Pretty chuffed with the end result.



    To round things off, and another first for me, made some sweet chlli dipping sauce, which again turned out pretty good.

    Crab cakes are right at the top of my favorite foods and yours look amazing! Never thought about that kind of sauce with them.

    I wonder how they would go in an air fryer.

    I air fry my wife's spring rolls and curry beef samosas and they turn out fantastic without the oil taste you get when deep frying.

    As it was my first attempt at making these, I decided to go the traditional shallow fry route, however those more observant will see there are 8 'raw' cakes ready to be cooked, with only 7 on the serving plate. 1 indeed was done via the air fryer, and M'Sahib who ate it reckoned it was excellent, slightly crisp on the outside, and moist and soft in the middle. Next time I'll go A/F.

    When I make crab cakes I cook them in a pan with a lot of melted butter. Your pan looked to be on the dry side to me.

    Very nice, I never thought to do crab cakes Thai stylee. They look great.

    They look wicked, I'd be doing them in garlic butter I reckon.
