    MM's Healthy Low Carb Salad

    I make this salad quite a bit and after I chopped and put the ingredients in a bowl I decided to take pics of the rest of the process. I do like my protein, but this one has no meat (heaven forbid). lol. Protein comes from the eggs.


    First, chop up some raw veggies that you like. I used celery, cucumber, mushrooms, radishes, and red peppers, and threw in some cubed feta cheese into a bowl. I also added some Kalamata olives.. yum!




    Next, I have two things boiling on the stove.. hard boiled eggs (ten mins after boiling) and my low carb pasta (rotini). The pasta has about 7 grams of carbs which is half decent for lunch. I try to eat under 50 grams of carbs a day, sometimes up to 100 g.

    Eggs are a boiling. Make sure you boil them for ten mins or you will get soft boiled eggs which are a bit runny.







    After the eggs and pasta are done, rinse them in a strainer under cold water for about five mins.






    Peel your eggs.. Let me just say eggs are the best thing around....




    Add the pasta into your salad (veggies)



    Slice up those yummy eggs, and put them on top.


    I use low carb Balsamic dressing.




    Add spices to suit. I like Dill Weed, Garlic powder and Sea Salt.


    Then it is time to enjoy this healthy tasty salad. If you have time you can chill this in the fridge for a bit and it tastes even better cold.

    She really is clueless. Fun fact - the suggested serving size for cheese is two small cubes, roughly the size of a pair of dice.

    I've lost 30 pounds doing low carb, so you can all stick it you know where.

    I know there was a reason why I stopped posting on TD.. too many idiots that are now crawling out of the woodwork. Cya!

    Kinda like the other obese poster on here, he buys sports equipment, that then sit idle and unused while he gorges his slob hole, you buy healthy-ish food, but wolf it down in servings sized for 4 healthy sized people.

    PB can kill two birds with one stone with this one. Combining her other fried diet meals with salad..

    Next time you do it MM, make it half the size. 1 egg, half the amount of pasta, stick to 2-3 cubes of feta.

    Her target always seems to be to get down to merely 'obese' from a starting point of 'morbidly obese'.

    Hence the cries of 'I lost 30 pounds!', tellingly making no mention of the start weight or end weight.

    Yes, certainly a healthy meal with lots of good ingredients but portion size needs addressing; we're all guilty of that of course - food is nice.
