    At our first house we had a big tree that interestingly enough, half would produce Apples and half would produce Pears . it use to yield so many that most of them would fall to the ground and rot.
    The bees use to love them, as the pears rotted would turn to alcohol and the bees would get drunk buzz around fall to the ground, then try to fly again. It was very funny.
    Until of course a bee will say something , a wasp will tell him to buzz off and fights will inevitably brake out. Nothing worst than a bunch of drunken wasps and bees.
    The sooner you fall behind, the more time you have to catch up.

    The Balloonists
    When you reach the part that says 'stretch a balloon over the neck of the fermenting jar' the best thing to do is find another website. The idea is that the fermentation gases partially inflate the balloon and escape through a couple of judicious pinpricks. The trouble is that fermentation gas is not just dry CO2. It is CO2, water vapour, trace gases that are better out than in, like SO2 and H2S, and general spray from bursting bubbles. This acidic cocktail condenses on the inside surface of the balloon and drips back into the wine, often leaching rubber, colour and ghastly off flavours along the way. Not clever. (But if you absolutely must use the balloon method, substitute a condom instead. It won't help the wine, but it will inflate to an enormous talking point!)

    Thanks dill. Good idea about the cheese Mozzarella is pretty easy but I don't reallly like it enough to be bothered.
    How is gouda made anyway? All that seperating curds and whey sounds like hard work.

    The only special equipment needed is a funnel. As for releasin the CO2 I give the lid a half twist back just enough to let CO2 escape, but not allow in any nasties. So far, no dramatic explosions.

    Might do. This was just a kind of spur of the moment thing. If it works you're right, It might be worth getting some proper equipment.

    So I tried some. ( from the five litre apple brew) NO apple flavour. If I had to pick it, pinot noir.
    And nicely alcoholic.

    I had a nice Chardonnay yesterday, 9 EUR a bottle, why bother making yourself

    trying the White Pinot Noir next, to prove Nidog white wine from red grapes do exist, despite his claims

    Lots of laws in Thailand. Enforcement of these laws is another thing altogether.

    Whilst the law is obviously not enforced with any vigor in Thailand it is still against the law and those that engage in such activity are always in jeopardy of being caught.
