I've never heard about "White wine headache"
maybe you should stop drinking only beers and vodka, the "sulphites" will give you headaches

Believe it or not, white wines tend to be more unstable than red wines, and usually winemakers may have to add more sulphites to white wines than red wines.

    Wine - Wikipedia
    From your link:
    Red wine
    Main article: Red wine
The red-wine production process involves extraction of color and flavor components from the grape skin. Red wine is made from dark-colored grape varieties. The actual color of the wine can range from violet, typical of young wines, through red for mature wines, to brown for older red wines. The juice from most purple grapes is actually greenish-white; the red color comes from anthocyan pigments (also called anthocyanins) present in the skin of the grape; exceptions are the relatively uncommon teinturier varieties, which actually have red flesh and produce red juice.

    White wine
    Main article: White wine
Fermentation of the non-colored grape pulp produces white wine. The grapes from which white wine is produced are typically green or yellow.

Whicj is EXACTLY what I said.

nope, you made the claim there were different grapes determining only the color for white wine, which is not the case

white wine can be made from "red" grapes, the process will also involve other additives in the process

try to read all the links, instead of "selecting" the ones that support only your stupid claims, TEFLER

you really have a selected memory and a dishonest one, nidogg, not the first time

    What a ridiculous comment.
You end up with apple 'wine'. (google it).
And the one bottle out of the two that 'worked' (The other one the yeast didn't seem to bloom and basically sank to the bottom).
Was excellent. Refreshing and crisp and a tad sparkling. You don't have t call it wine, or cider, but it was very drinkable and quite alcoholic.
Don't be such a fucking snob, it's been fun.
Go get some fruit, yeast and sugar and try your own homemade' wine' just for the hell of it instead of giving people shit who are just giving it a shot.

    it’s still pruno.

apparently condoms on the plastic gallons buckets work better because they expand more easy and maintain the seal.

    so I heard

You're determined to stick with the prison moonshine theme aren't you.
It's just how millions of people make homemade wine. You should try it.
Anyway, I don't use plastic gallon 'buckets' I use large glass jars, 5 litre and 8 litre the tops of which are too wide. Someone suggested balloons for the smaller bottles but I didn't have any on hand.
Anyway, in a week it'll be a month for the bottles and they say it should be good by then so I'll let you know how it goes. The last two bottles were a month.

I used to just rinse out, partly fill with boiling water, add sugar until it stopped dissolving, add whatever juice was on sale at the time then wait till it cooled down to a warm temperature that wouldn't kill the yeast. Getting the yeast in at the right time is critical. Too hot and you kill it, too cool and it won't activate.

The boiling water does the sterilization and gets some more sugar dissolved in the mix.
Some people think it don't, but it be.

I found using a starter bottle for the yeast was very successful.
Using a clear, preferably sterilised bottle, put in some warm water. (For a 33cl bottle, about a third of the bottle, but it's not critical).
Add half a teaspoon or so of sugar.
Give it a shake until the sugar has dissolved.
(Or mix sugar and water in a bowl and stir it before putting it in bottle.)
    Add yeast to bottle.
Give it a shake, and loosely put a piece of cotton wool in the top of the bottle. (To stop flies getting in.)
Leave in a warm place. (No problem in Thailand).
After 15 minutes or so, it will have a layer of foam on top as the yeast is activated.
Give it a shake, and pitch it in the warm, (certainly not in any way hot), juice mix.

I brewed for many years, beer and wine, and found a starter bottle to give 100% success.
