    I Remember Nonna 14 (Mushroom and Anchovy)

    A delicious savory sauce that blends the flavors of wine-braised mushrooms with anchovies and tomatoes. Very enjoyable...and probably the last in this series as restaurants are now open and serving...Nonna thanks you for your attention...

    Any danger of the recipe being posted? I presume a picture posted after finishing the wine led to a recent nap

    What you need:

    1/2 kilo mushrooms sliced
    1/3 cup red wine
    1/3 cup EVOO
    1 cup chopped red onion
    5-6 cloves garlic chopped
    2 local red chilies chopped
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    4-5 anchovy fillets minced
    1/2 cup chopped and drained tomatoes
    1/4 cup chopped parsley

    What you do:

    Braise the mushrooms in the wine for 3-4 minutes and set aside with liquid. Saute the red onion, garlic and chilies in half the EVOO until the garlic is light brown. Add the mushrooms and their juices, salt, pepper, anchovies and tomatoes. Mix well and simmer for 10 minutes or so to thicken. Remove from heat and mix in parsley. Pour over linguine and add remaining EVOO. Toss well and serve.

    Start by braising, then saute the mushrooms?

    Is that correct, or am I missing something?

    haha - thanks.

    MrsKW said haven't I already made this one? (recalling Nonna's eggplant and mushroom recipe) but after realising it was different, I think I know what we will be sampling today or tomorrow.
