    Two Day Dry Cured Steak

    I was walking by the local butcher this evening and saw a rack 'o ribs hanging.

    I had the butcher cut me out a couple of cutlets.

    I let them dry after washing and then salted them down.

    My plan is to cook them up Sunday using the reverse sear method.

    Suggestions on sides that don't involve peas?

    ^ Nothing heavy for me personally

    You can either go with the starch, veg and gravy/sauce route (which is heavy) or the coleslaw, salad and corn on the cob route (which is lighter).

    I'd be making whatever sides you choose to be substantial, can't see you being able to get past a bite or two of PI beef so you'll need something else on the plate to fill you up. Happy to be proved wrong but when it comes to steak, in my experience the more you spend the better it is (and vice versa)!

    Good luck. My 25 years here has taught me that the pork is cheap and excellent, chicken good and the beef horrible. And my wife is an excellent cook. Local beef is generally like chewing on an inner tube, no matter what you do to it.

    Marinade them in some JD if they're local. That'll soften the meat and give some decent flavour.

    He should let it sit in a kiwi or papaya marinade for a good 5 to 7 days.
