    In Mrs Noodles home village they would nearly always slaughter a buffalo for a wedding right up until maybe 10 - 15 years ago.

    To be honest, we just cooked the chops. I bought green beans but neither one of us wanted to mess around with making a full meal, so we went keto and just had the steak.

    Even with a sous vide wand in Thailand, you can soften that Asian cattle but there was never any flavour unless you marinade. It was also like a cardboard consistency.
    Those skinny beasts dont live on green pastures


    Sounds like it turned out ok though Tops, but I'd take Davis' advice and go for the juicy pork chops.

    I've never used acidic fruit on beef before. Pork, for sure but never beef.

    Did you ever visit a place called Best beef near Tesco, On Nut? On one of your voyages to Asia, Christopher Columbullshit?

    It was a music venue cum Thai outdoor restaurant and an all you can eat for about 199 or 299 baht...Their beef wasn't bad there but heavily marinaded.

    I've salted steaks overnite with good results...but never over a two day period. Did you wrap them in plastic wrap Topper?

    You said most of the juice was gone but the piece on the fork in the pic looked pretty juicy.

    It looked not bad. Steak is not easy to get right. I have some thin sliced steak undergoing marination in the fridge at the moment but it is for a noodle dish on Monday or Tuesday, I'll try and get a decent steak through the week and post results here when done.

    I think next time I'll take them out of the fridge a couple of hours before cooking, season them and then reverse sear.

    EN, you're right that steak isn't the easiest to get right unless you've got a standardized thickness and procedure that goes with it. I rarely eat beef, other than burgers so cooking steaks was a bit of a challenge for me, oddly enough.
