    Tomcat's Tuna Diablo

    What you need:

    1 6" slice of crusty baguette
    1 can of local white meat tuna (in water or oil, drained...I use Nautilus)
    1/4 minced red onion (and 1/2 stalk celery, if available)
    2 small red chilies, finely chopped
    Juice of one local lime
    2 tablespoons capers
    2-3 anchovy fillets (minced)
    2-3 tablespoons flat leaf parsley (chopped)
    1 ripe tomato (sliced)
    3 slices of extra mature cheddar
    EVOO

    What you do:

    Mix tuna with all other ingredients except bread, tomato, cheese and EVOO.
    Drizzle interior of split baguette with EVOO. Layer 3 slices of tomato (sprinkled with salt and pepper) onto the bread. Add 3 slices of cheese. Generously spoon tuna mixture into the sandwich (see pic of finished product in the manwich thread), close and serve with olives or pickles...

    ...can't find the one I wanted...this one will have to do (from the manwich thread)...the herb is basil instead of parsley...and I used spring onions instead of red onions...

    Sounds great. Can't get limes here. The Chinese haven't really taken to them.
    'flat leaf parsley' would that be cilantro by another name?

    There are two main types of parsley. The bushy one, which is often used for decoration, and a flat leaf one.

    ...no...parsley is a different herb. However, I've also added cilantro to this sandwich and the taste is delightful...

    okay so the 'flat leaf' one is cilantro. very fragrant and in the same family as celery. the 'bushy' one is parsley. Good in a white sauce poached fish, in fact adds a flavour dimension to many things, not just for decoration.

    ...no, it isn't: flat leaf parsley is NOT cilantro...cilantro (fresh coriander) is a completely different herb...
