    I Remember Nonna 7 (marinated bell pepper sauce)

    ...this is an uncooked sauce that needs to marinate about 8 hours unrefrigerated:

    what you need:

    a. 3 bell peppers (red, yellow, green) julienned into very thin strips then cut in half
    b. 1 celery heart (about 4 stalks with leaves) chopped
    c. 3-4 medium tomatoes, chopped and drained in a colander
    d. 3-4 tablespoons torn basil
    e. 1 teaspoon dried oregano
    g. 2 cloves garlic, minced
    h. 1-1/2 teaspoon salt
    i. 1/2 teaspoon black pepper
    j. 2 tablespoons red wine vinegar
    k. 3 tablespoons EVOO
    l. 1 finely chopped local red chili

    What you do:

    a. Mix all ingredients in a large bowl, cover and let sit for 8 hours or so, mixing occasionally.
    b. Cook and drain pasta (I recommend De Cecco linguine), toss with 2 tablespoons to prevent sticking
    c. Bring pasta and sauce bowls to table...serve unsauced pasta into individual bowls, add uncooked sauce (as much as you like) and mix.
    d. Sprinkle with Parmesan to taste.

    Maybe I've read this wrong (I've had a few), but are you serving the ingredients as they are on the pasta after marinating?

    I guess the hot pasta serves to "cook" the ingredients in a similar way to a carbonara when the egg and cheese is added?

    a) yes, directly on the cooling pasta...
    b) No, the sauce doesn't require "cooking"...pepper crunch is preserved...
