Well, another week has flown by. A rummage through the freezer produced a pork loin, so then a case of how I could cook it, and with what side dishes.
Settled on a roasted loin with a spice rub, a honey and garlic sauce, roast potatoes, cauliflower cheese, and buttered and peppered carrots.
First up I made the sauce, which was also going to baste the pork. Sauteed some crushed garlic in melted butter, added honey, soy sauce, rice wine vinegar, and a little bit of brown sugar.
Then set about the rub for the loin. Some paprika, onion salt, garlic powder, salt and pepper, mixed with a little olive oil then rubbed all over the meat.
Put the pork into a roasting dish then basted with about half of the sauce that I'd made, and into the oven for an hour, with it being removed and basted with more sauce every 20 minutes.
Prepared and steamed the potatoes and cauliflower for about 5 minutes, during which I made up the cheese sauce, using mature cheddar and saving some to sprinkle over the top before going in the oven. Really can't remember the last time that I had cauliflower cheese. For the potatoes, I used a couple of ounces of lard in a small roasting dish.
Steamed the carrots, then when tender and drained, added some butter and fresh ground white pepper.
Everything came together on time. Removed the pork and let it rest for 15 minutes, having drained the sauce into a saucepan to which I added a spoonful of flour to thicken, then added some beef stock and simmered until a honey like consistency.
Meanwhile, M'Sahib had made herself some noodles with prawns, vegetables and tamarind.
