    I Remember Nonna 6 (pesto on penne)

    ...came across a load of basil in the supermarket last week...that put pesto on the menu immediately. For this uncooked sauce, I substituted roasted unsalted almonds for the more usual toasted pine nuts. EVOO, basil, garlic, almonds and Parmesan all dumped into the blender at once to produce the sauce...easy and very satisfying on penne rigate.

    Fresh pesto is great!

    Cashews do well in pesto when the pine nuts are scarce, too.

    ^^^agree...I've also tried walnuts, hazelnuts, pistachios...and nut combos: all tasty...pesto is perhaps the most versatile of pasta sauces...

    A filler, a condiment, an additive, a dressing - to a smaller extent, a sauce.
    Agreeable regarding the nut intermixing - especially as it applies to basil pesto, where pine nuts [labour intensive] are incredibly expensive per ounce.

    Of the pedantic side, "pesto" refers to a technique or style, less a classified cuisine form.

    One could easily design a lovely pesto from most anything.
    Imaginations going wild.

    wtf where did my post go from yesterday? Was saying fresh pesto is better that in a jar terribly offensive to some MOD, this is getting beyond odd.

    ...no idea what happened to your post, but agree completely...just the smell of industrial pesto is off-putting...

    Nonna doesn't seem to have been keen on meat in her dishes ... or perhaps TC just doesn't remember much of the meat dishes.

    ...Nonna's sausage and meatballs in tomato sauce were about the extent of her meat-in-sauces dishes. I've already done the sausage recipe...if the sequester lasts long enough, I'll post her chicken cacciatore with fettuccine. For right now, however, only the lightest and simplest sauces that she could throw together quickly when grandchildren popped in unexpectedly for lunch...
