    I Remember Nonna (5) Lemon Sauce

    A refreshing uncooked summer sauce easy to prepare: tangy lemon juice, lemon zest, EVOO, Parmesan, basil, capers, garlic, chilis, salt and pepper...on linguine:

    TC’s Nonna’s recipes really are great. So simple and healthy.

    I was wondering if they could all be put on the same thread so easier to find in the future.

    ...a number of ingredients can be added, dropped or mixed in as desired: chopped anchovies, sliced black Kalamata olives, sliced green olives, chopped chilis, parsley...the list is limited only by imagination...and taste, of course...

    Recipe:

    What you need:

    1 package linguine
    2/3 cup EVOO
    2/3 cup grated Parmesan
    1/2 cup fresh lemon juice (2-3 lemons)
    2 tablespoons lemon zest
    1/3 cup basil leaves
    2-3 cloves garlic minced
    2-3 tablespoons capers
    Salt and black pepper to taste

    What you do:

    Whisk oil, lemon juice and Parmesan to blend.
    Add chilis, capers, minced garlic, salt and pepper.
    Cook the pasta and reserve about one cup of pasta water before draining.
    Toss the pasta and lemon sauce.
    Add a little pasta water to moisten (as required).
    Toss with basil leaves and top with lemon zest.

    I keep a little more grated Parmesan and chili flakes on the table in the event someone needs more.

    Made this lemon sauce a couple of evenings ago. Very tasty.

    I’ll be trying the one with marinated bell peppers tomorrow.
