Thread: Sweetbreads?

First of all does anyone know what's the Thai name for 'Sweerbreads'? And can I buy them in Ting Tong Land? And where specifically?

Sweetbread is "the culinary term for the thymus gland (in the throat) and the pancreas (near the stomach) in calves, lambs and pigs." Larousse further states that thymus sweetbreads are "elongated and irregular in shape" while pancreas sweetbreads are "larger and rounded."

Spot on Nev. Me missus now knows what I've been asking her. She says they're sold at most meat stalls, even though I've never seen them, or they can be ordered.

An acquired taste Prag, at me uncles place in Wales they used to regularly have them and brains - have to say that whilst i ate them as a child i haven't sought them out as an adult. Foodies seem to rave about them though.

For me they're the bees knees. Unfortunately the info supplied to me from Nev proved false as all I got directed to, in person, was the Pancreas. Not the same. The search continues.

I have a feeling self respecting Thai butchers nab the sweetbreads for their own household, and let the punters squabble over the rest of the stuff.
Bit like beef cheek- aussie butchers would have that themselves thank you, seeing as the great unwashed did not yet appreciate them.

I don't think you will find them here as they are normally only found in young animals and I haven't seen any evidence of Thai's slaughtering young animals.
50 years ago when I worked in a slaughter house some of the guys used to cut them out to eat whenever we were slaughtering lambs I always thought they were a milk gland so I have been educated after all these years.
Never appealed to me along with any other offal.

Thanks to all respondents. Seems I'm struggling but it's to be expected in rural Thailand.

Probably due to their preparation process in that you soak them in milk for 4 hours prior to cooking.
