Carved up a Ham earlier, if you see these somewhere do yourself a favour and buy one to try it. Not expensive at about 500 Baht a key, no idea what type of wood or process they use smoking them but I really like the flavour they get into them.
Anyways, with some leftover roast chook in the fridge too a bastardised club samidge seemed a fair idea.

^ & ^^ yes correctamundo. Its not really worth a thread Topper but i'll post how i make it, its very simple. I always have a jar in the fridge, love the stuff.
Here in the PI, they make a spicy pickled radish that's fooking lovely as a side or add-on to a sandwich. That's my next pickled dish to learn.
the process looks after itself, you just have to ensure you vent the gas and push the cabbage below the surface which i do daily. Your issue will probably be making sure you keep it coolish, store in a cupboard. I love pickles and they are easy, good for you too - probiotic. In Thailand i love the pickled bamboo, love it in curries.
I have wanted to try making Kimchi but in the UK you can't get Chinese cabbage all year.
I've not made pickles here as they're readily available in supermarkets, but in BKK I probably made a batch once or twice every three or four months. Kimchi here is quite popular, there's tons of Filipinos making it for resale here and its pretty dang tasty.
