    ^It'll be coming off and discarded. If I was only cooking the pork it would have been scored into diamond patterns with lashings of salt rubbed into it but as you know, to get the crackling going the oven needs to be ran at blazing temperature and that's not going to work out well for the pumpkin and chicken! It's ok, I can live without crackling for today.

    ^The problem (as stated) with crackling is the oven has to be blazing hot and in the process there's going to be quite a lot of smoke. That's not a great idea in an airconditioned condo, have done it before with windows and doors open but can still smell pork in the lounge room and curtains for weeks after! For the same reason, I never deep-fry at home either. As it was, the cracking started to blister and the Missus claimed it so it didn't go in the bin. The meat and fat-cap came out perfectly but there's no skill involved when you've got a temp-probe, blood lovely to eat hot or cold

    I used to like a corned beef hash, haven't made one for ages. I used to cook the hash then make a hole in the middle while it was still in the pan and drop the raw egg in there to cook. A one-pan wonder.

    baked beans in the hash? FOOKING heresy I say!!!! potatoes and onions are the only things allowed in a hash, unless you're adding stuff like bell peppers or even minced tomatoes ..... but never, ever, ever baked beans.

    Rack of lamb lunch today. A bit of low carb veg on the side but no sauces or whatnot, this was all about the lamb.

    There was no time up in Isaan for such fancy food today... it was a quick working lunch of moo palo and then back to it.

    This jetty won't build itself.

    M'Sahib's turn in the kitchen today. Presented me with large prawns baked on a bed of glass noodles, and though you can't see them, chunks of ham. Heaps of whole black peppercorns which livened things up.
