    massaman curry , any experience of veggie versions please.

    Could eat daily , usually use chicken, but 2 vegetarian guests.

    I have thought of just more spuds to replace the meat, one eats fish so could add prawns at end?

    other ideas
    1 Tofu to help absorb the rich sauce
    2 Paneer labneh or Feta in deep fried cubes? may go soggy
    3 Large Mushrooms not easy to find here, tho I've seen canned at Lotus and Tesco
    4 Some variety of Pumpkin and Squash grow here but thought may just dissolve


    So all you curry wallahs any experience with above
    Could also bulk out with raita sides yog , tempura poopadomes Nan etc?

    ^ How about egg plant and courgette? They usually go well in a vegetable curry.

    A handful of peas couldn't hurt?

    Fuk Tong work well. I always added halved slightly under ripe tomoatoes to add a bit of bite. I cut the onion really chunky.

    @david44 - I'd add fried tofu slices and potatoes. Don't add prawns because if the other is vegan, then they won't eat your dish if it has prawns or fish. Don't use fish sauce either.

    Use of peas is OK too, IMO. They'll add color.

    I used to watch the YT channel "Spice Eats". It's ran by an Indian couple. They have good recipes.

    Thanks guys perfect no shopping solutions,

    I forgot eggplant we have growing, as I didn't grow up with them, mum and scool lunches were meat 2 veg (steamed cabbage with carrots or peas) most days never occured until kiwi ruggabugga serenaded a canadian in the MooseHakka incident.

    And green onions underipe toms all in stock sorted

    I foresee fewer restaurant lunches during the warm season and more DIY

    When I've cooked curries for vegetarian and omnivore guests, dining together, I cook the curry as usual, but without the meat. I then barbecue some chicken, sometimes some pork, and some prawns separately and have them on the table at the same time. Those who wish to add meat or fish into the curry or just eat it with the curry can do so as they please and all are happy.

    I add courgettes and peas, but only pea aubergines or Thai green aubergine rather than large aurbegine, to massaman curry.
