    Right into the home straight and it gets messy.

    Roll out your dough, the nepali ladies used to do them individually but i roll out a plate sized piece and roll it to c2mm thick. Find yourself a cutter, i have to improvise with a top off me thermos, just the right size and cut disks, gather re-roll and go again.

    Gather it up and start one end and pinch the two sides together if the dough is right its really pliable and easy, no wetting required. Do the other end and meet in the middle.

    Lastly, into the steamer for 20-30 minutes.

    I have a small two tier one, and you need to switch the tiers half way so they all cook evenly.

    Oh and always remember to grease the bottom of each tier or you'll be in a world of pain trying to get them out.

    And wait.

    The whole process is good fun if you have kids as there is no heat involved until the steaming and they get the knack of it quickly.

    I couldn't be bothered to make the achar but used Franks Hot Sauce which is a reasonable substitute.

    ^ as you can see mine aren't up to that standard. With the amount in made i'll be freezing about 25 or more. To freeze uncooked, make them up, oil a place or try place them on and then into the freezer. Once frozen, take off the plate and put into a bag or box

    First lot ready to freeze.

    Topper, same same. A basic dumpling dough the chinkies have been making for thousands of years and each country has their own spin in it. You can fry them too.

    Confession, the cases need to be 1mm thick and as stuffed as you can without breaking the cases or you get wizard sleeves with turtle heads poking out - in my defence its been so long.

    There was a shop opposite my gaff that did the same in Korea. They call em mandu there and without fail I would always drown the spicy ones in more chili sauce when I was on the way home from the pub. And polish off 9 to my missus' 3.

    I never knew I could have periods out of my arse until the morning after my first binge on them.
