I'll add, that this with the potato is perfect - tastes much nicer than with rice, imho. I didn't expect it to work as well as it does.

I went for sushi on weekend, no fresh salmon at all. Everything else was still available, but no salmon.
One thing we've never understood about NZ is the cost of salmon . . . currently $42/kg - ridiculous

Yes, there are - cultivated but grown in rivers or farms. Another oddity is that you cannot buy any trout anywhere. You can catch it and eat it but the sale of trout is prohibited and there is no cultivation of it - prohibited.

This must be for Alaskan wild then? I just checked the local grocery store price. $9.98 a pound for wild sockeye salmon. This is the time of year that many local Salmon runs start as they make their way back up the rivers to spawn. Lots of sport fisherman will be out angling. :)
