    Aussie corned beef- where have you been all my life?

    Bought a joint of beef yesterday thinking it was just a normal silverside joint or something until Headworx asked where I got the corned beef from
    Associating it with the canned stuff we have back in the UK I felt like I'd been ripped off

    Anyway here it is...

    Googled how to cook it whilst rudely and impatiently awaiting HW's reply which luckily was near the same.

    It was all slimey when I first took it out of the packet and washed it under the tap

    Anyway, just stick it in a pot with water covering it and add a quarter of a cup of malt vinegar, 2 big tablespoons of brown sugar, an onion sliced in two, some garlic clothes and 3 bay leaves.


    Then go do some exercise or go the pub for a couple of hours, come back... and to be honest it didn't look too good (a dull greyish colour)
    But cut into it...


    Tender as hell


    Now to get some bread and pickles


    Its a little salty but perfect with it and really tender. Pisses all over that stuff in a can.

    How do you Aussies or Yanks eat this stuff?
    I'm guessing i'll be needing some rye and gherkins?

    Eat with mashed spuds, brussell sprouts and cheese sauce.

    Corned Beef/Silverside was a staple when I was a boy.

    Also a staple in older style pubs.

    Almost always served with a white sauce.



    Ingredients

    • 1 piece silverside corned beef
    • 5 whole cloves
    • 2 bay leaf
    • 1 tbs brown sugar
    • 1 onion chopped
    • 1/2 cup balsamic vinegar
    • 1 cup hot water

    One of my mum's staple dishes she made us as a kid and then always corned beef sangers the next day for school lunch.

    Love corn beef but brussell sprouts can fuck right off.

    The following day is Corned beef and sweet mustard pickles samidges.

    Very very hard to beat

    If you the salty taste is too much then when you are cooking it put in some potatoes they will take the salt out.
    Make a white sauce, you can put in onions or cheese to have with it.
    When you have in sandwiches add some pickles (not Dill pickles).
    I love the stuff.

    ^Mentioned that to Dill in a PM, the fat was the icing on the cake so to speak but these have most of it trimmed off (I bought one today too).

    Grab an extra thick sliced seeded bloomer, bit (loads) of Lurpak, some (loads) of that sweet sweet meat and some (loads) Branston.

    Corned beef, roast spud, white or cheese sauce plus any vege you like is the go for.
    Love it.
    Superb lean meat, a couple of cloves, some basil, onions, black pepper corns, a spoonful of treacle, honey or molasses, a few cloves of garlic, splendid stuff.

    You will not regret it, I didn't know Corned Beef could be that tender.

    I'd rate it a 10 but they've trimmed almost all of the fat off, so it gets a 9.5 score from me.
