    I've never heard of brown sugar being added, usually the corn is naturally sweet enough. I've added the onion powder as well, but I didn't care for the taste.

    I'd recommend getting a pork butt next. It's easy, watch your internal temp, then shred it into pulled pork.

    It was only a tablespoon of the brown sugar and a teaspoon of the onion powder. The butter, paprika and salt are probably the most important in that mix. By the way, was going to mention that bacon wrap would probably work even better on a grill because of the hotter temps.

    Since it seems like you live in the sticks maybe you should check and see if there are any local small farms around. Sometime the farmers will have a couple head of cattle. You could buy a side of beef.

    and some chicken bits I'd like to try on the smoker...but it's going to have to cool down outdoors before I try anything else.

    Have a guest coming in a week or so who likes ribs. Not sure which will happen first.

    I don't care what any Mercan says, the best BBQ i've had was in Argentina. Whole calves and sheep BBQ'd - no bragging it was just killed hung and BBQd by blokes who have done it for years.

    Hell ya it is worth it I pay more for my Costco membership and they sell the prime meat as well. The stuff is worth the price. 3.58 a pound for a prime brisket is unreal value. No Sams club in Washington as Costco kicked their butts. I won't step in a Walmart I hate the Walton family.

    Plenty of great beef and various cuts in US but we folks living in the sticks of the LoS have to work harder to find good beef. Fortunately for me Sakhon Nakhon province is just up the road. So if you're in the Isaan sticks head there.

    I go to Thai French ranch at Pon Yang Kham. Good selection.

    I was reading yesterday thwt my home town of perth western australia will be getting a Costco soon. Membrrship is $60 this is a new concept as they dont have membrrship places there. Just coles,woolworths Aldi etc. Will be interesting to see how folk take to it.

    Hard to say. It really depends on the shopping habits of you lot. Costco is good for lots of things. A large part of Costco is dry goods and clothes and they also have a tire shop. The rest is groceries mostly in bulk. But they handle stuff that is not easy to find in American groceries like imported cheeses, prime beef etc. All depends on if Aussies want to buy in bulk.

    Well I could drive 40-50 miles to get to a Costco...but not really that fond of driving right now. M-I-L has a Costco membership and now lives back close by to it. She took the wife there not long ago and she picked up some of that meat I've cooked in this thread. The pork chops were definitely from Costco.

    That's the thing. Partially the reason we let our Sams membership go. At the time it was just the wife and I and we didn't need bulk. The other part was the membership cost was no longer able to be deducted from my pay. We got some cock and bull story about why that was...and that's what pissed me off.

    Now though that 2 teenage grandsons are basically living with us, bulk would come in handy. Plus the meat choices for smoking and grilling. They have a "plus" membership that is $100/year. But I'm not really clear what the added benefits are for $55 more than the regular membership.

    Well for me it is worth it just for the gas. I have costco and its gas station 8 miles away is constantly 20 to 50 cents cheaper a gallon so well worth the drive up just for gas. Then all the other stuff like the cheapest TP and paper towels not to mention the cheese.
