    ^ Agreed, its personal but if you have Tomato Ketchup on steak there's just no coming back from that Chit.     Think I was 40 before I learned how to eat a steak proper. Up until then it was always "well done".

    A steak must be succulent … after medium rare you've wasted your money on any decent cut of beef.

    Start with a 2kg leg of lamb. Score the top, add crushed garlic, fresh rosemary, salt, pepper and olive oil. Lay on a bed of onion, garlic and a cup of beef broth.

    I've miscalculated tonight as well... I'm doing my Mediterranean lamb shanks which take about 4 hours, but the damn convection oven only goes up to 60 minutes. I've been working on the pond and the bladdy wife forgot to reset the oven... it was off for 2 hours before I realised.

    Don't have to score the lamb. Stab it with the knife and insert the garlic cloves into the wounds.

    Saves crushing garlic and slashing the leg to death allowing lots of the juices to escape.
