    Snacks for any occasion.

    Summer is here in the brew town and with that it's time for outdoor socializing and along with that comes snacks.

    Here is one of my favorites as it's quick and easy.

    All you need are tortilla chips, a type of summer sausage some cheese of your choice and some jalapeno slices.

    Thinly slice the summer sausage and place it on the chip, add the cheese and top with jalapeņos.

    Microwave for about 20 seconds, just until the cheese melts and there you have it. A quick satisfying snack.

    Today I used BelGioioso Asiago and Sartori Chipotle BellaVitano. I sprinkled a pinch of Parsley and Oregano on top but you really don't need to.

    My sausage of choice is Johnsonville Garlic Summer but you may use what you like and choose whatever cheeses you have available.
    The finished product should present well for any occasion.
    I hope you try it sometime. Relax and enjoy.

    I thought about that but this is specifically a snack. I was thinking it could be a quick reference to someone who may be needing to entertain company ect.

    I'm hoping others will populate the thread with their ideas as well. I'm curious as to what folks on the other side have on order.

    I've never eaten jalapeņos.

    Are they added for taste or spiciness or another reason?

    Here is something we had while at a karaoke bar in Laos. Fried baby crabs dipped in a hot sauce and a super spicy papaya salad. Washed down with Carlsberg no less.

    Yes, the jalapeno peppers give it a bit of zing. There are tamed varieties of the same product if you don't care for the heat. I've even gone with honey bourbon sweet and spicy pickles as well as Famous Dave's Devil's Spit pickles. Man they are hot!

    Whatever you like it's very versatile quick and easy. Perfect for the unexpected guest.

    There is an island upriver from our house in Laos and one day we happened to find this fellow and his party net fishing by walking in a line in the shallows.

    He was more than happy to show up his catch.
    I'm guessing these little diddy's will either be sun dried or deep fried.

    You should have some buffalo chips laying around. Don't eat the chips from the sick ones.



    One of my favorite snacks and guilty pleasures is tortilla chips and a homemade cheese dip. Ingredients:

    1/4 pound of Ground beef, milk and homemade salsa +

    or yellow corn chips


    Brown the ground beef, drain grease. Pour a 1/4 cup of milk in a sauce pan, into that melt a quarter of a loaf of Mexican velveeta. Add the ground beef and a 1/4 cup of the salsa. If you have no homemade salsa a can of mexican Rotel(see pic above) will work. Mix together on low heat until all ingredients are warm and the "cheese" is fully melted. Spicy ground sausage or mexican chorizo can be used in place of the ground beef.

    Dip away until the bag of tortilla chips is empty. I no longer drink, but I suspect some cold cervezas would go well with this. Enjoy.

    I have no pics of the last bowl of Velveeta cheese dip I made, but it looked a lot like this:

    Both. The pickled ones in a can or jar can be quite spicy but are full of flavor go great on pizza, sandwiches, nachos etc. The fresh off the vine vary in heat based on variety and ripeness. I have some growing in the garden right now as I do every year and will be pickling them as well as cooking with them fresh off the vine.

    Here they are made into poppers...



    Stuffed with cream cheese and bacon wrapped..



    I love jalapenos.

    Most of the poppers are usually made with pretty mild jalapenos. Would like to find them with a hotter pepper.

    They go great with most things, love them with eggs & on Pizza, can buy fresh ones in local market at times in Udon, not great as not much heat, but sliced in two & grilled with cheese and bacon bits on top - Sap!

    I found these at the local market. I have no clue how they are prepared. Deep fried and dipped in butter?
    I asked the gal for crunch toad without the bones. She exclaimed "they wouldn't be crunchy then would they!"

    I ate the fries but took one bite of this rotdog and politely threw in the trash.
    Frank Zappa played in the back of my mind....so this was a drive through restaurant in Hollywood, so this....

    When you cane as much ale and smoke as much mad monk as you obviously do, you wanna avoid all that chopping and putting things in ovens otherwise it's gonna go pear.

    If we have an abundance of unripe durian fruit we slice the fruit into thin slices and home fry them. Excellent with a cold beer or two. On their own or with home made sweet and sour dips.
