I cannot recall any of my food or dining that would require it on the table, measured amounts in cooking fine

I like Lime Garlic Chilli but fresh, understand in cold places maybe the above selections.

Partner uses all the usual Thai sugar/Namman Hoi sauces on her noodles.

I like the Spanish long sweet Guindillos chillis served with many Mediterranean Greek,Leb or Turkish pide .
If you have never tried a real treat , they used to be in Foodland many years ago and Tapas in BKK

The Basque pricey ones are teh dogs bollocks, Crspo so so , hard to find up here.

Hot Sauce. What do you use?-guindillas-3760047006942-jpg

Sweet enough to have as an amuse bouche with fino and aceitunas in taas bars
    These ok

If you can get the fresh ones pickle your own using light cider vinegar, need refrigerate here in a kilner type vessel or in olive oli(virgin not needed, the used oil infused is great for tortillas)

These almost impossible to find outside Euzkadi Paris or B Aires

Those hot sauces are good for mainly three things

    Ulcers

Try coriander leaves, garlic, bit of olive oil and chillies of choice, add a bit of turmeric, whisk until thick and slosh it on everything; delish and healthy.

You are just a big pussy.

They definitely do not cause ulcers. That is an old wives tale.

I'm not into too spicy. If you buy quality ingredients, steak for instance which you have plenty of in the US when its not genetically modified, then you don't need it.

My Missus has 15 chilis in her somtam and is always complaing of stomach pain.

Those sauces, chilis and peppers in moderation are good for your metabolism and burning fat though. Maybe I should start using more

There is no genetically modified beef in the US. Where did you hear that nonsense?

Well for a steak maybe not but there is a ton of other foods that taste far better with it. You can stick to your HP sauce. I am doing the hot sauce.

I got a few other sauces in the kitchen as well. But these are what I use the most.
I had an american mate in the philippines who had come there to retire and to be with his son who was in the US military there but unfortunately the volcano going off forced the military out. Old bruce was in the Habit of putting 2 drops of Tabasco in every beer. I thought that was a bit strange but pretty soon i was doing the same thing. Dont really like it on food though.

For a while there was a fad of putting lime in your beer in the US. A brewery in Arizona as I recall started putting jalapeno peppers in theirs. It was pretty damn good.

I guess some of you commonwealth guys do not do the hot sauce. In the US this is something you grow up with so this to me is an essential condiment.

I always keep a bottle of this on hand...

Prefer it to the McIlhenny's tabasco...put it on eggs, fried taters, in soups, etc.. Also always have a bottle of the Huy Fong Sriracha shit around too. Use that for any Asian style stir frys I make.

Used to cook with hot sauces, but am now restricted to putting them on my dish alone. Too many complaints from the family about food being too spicy/hot.

Have had the Cholula AO mentioned in the past...not bad.

Seems to be a small group of loyal fans. I do not care for it myself I am a Tabasco man.

Sorry Ketchup, it looks like your reign is over. The best selling condiment in America is now mayonnaise.[at]
