    Actually made some home made bases tonight, it's been a long time coming and I can safely say....

    This was the freshest, tastiest pizza I've ever eaten..

    So, I'm on a diet, but M'Sahib isn't. She asked that I make a pizza for her a few days ago, and in doing so I'd made enough pizza dough for three bases, with two going into the freezer. Today her need of another were relayed, with the toppings of her choice. First off, defrosting one of the frozen dough portions.



    Then got to work making the tomato sauce base, firstly by turning a tin of whole tomatoes into a passata.



    Fried off some grated garlic in olive oil



    before adding the passata and a mix of fresh thyme and rosemary, and dried basil, oregano and chilli flakes.



    This was well mixed, brought to the boil and allowed to simmer for a couple of hours to reduce down whilst the pizza dough fully defrosted.



    Apart from mozzarella, she wanted a mix of mushrooms, sliced onions and black olives. Sauteed the mushrooms and onions slightly first.



    The tomato sauce turned nice and thick, so taken off the stove to cool.



    Put the dough into a lightly oiled pizza pan



    Spread the dough to the edges of the pan with my fingers, before pricking the base with a fork and brushing with olive oil.



    Blind baked the base in a very hot oven for 5 minutes then got ready to make up the pizza.



    Spread the tomato sauce first (there's enough left for the third pizza whenever she wants it).



    Ready for the final bake.



    and she's done.....

    Nice to see PAG turn up and bring some pizza to this thread.

    Whoever that Chitty fella is, he's a bloody pizza rapist... I have no idea why Joe90 would follow his lead and produce stuff like that chilli pizza thing - yuck; I can say with certainty that the dog would not eat that. (Mendip's dog's probably would, but they have less fine breeding - sorry Mendip. )

    Not really, it just wouldn't get used enough. Pizza is maybe once a month or so, and whilst I would eat it, smoked food isn't on my 'go to' list. We have a decent fan assisted convection oven, which will go up to 280C, which is enough for virtually of all my baking/roasting needs.
