Chit, fine looking pizza, congrats. Just one thing, doesn't it get a bit smokey in the sale de cuisine with the woodfired oven going or have you got a fuk off extractor?

I've posted this many a time before, but this fella's recipe is great for homemade bases and a tomato sauce:

It takes about 3 hours or so for the dough.
Gonna try and perfect this dough, maybe even giving it a cheesy filling at some point.
I use Bobby Flay's recipe for pizza dough. Takes about an hour and a half. I use 00 Divella flour from Makro.
I mentioned Antonio Calluccio. Here's his recipe for dough and complete pizza. I note this is one where he does blobs of cheese and not grated. The article is good, click on the photo for full recipe. I note 40 minutes from mixing flour, yeast and water to topping and popping in the oven. Sounds quick and easy.
Note, too, ordinary plain flour.
