    Made. Put the ribs into a ziplock bag in the morning with BBQ sauce, mustard, soy sauce, dash o' pineapple juice and paprika.

    At 3pm wrap tight in oiled foil with the marinade poured in, fat side up, and in the oven at 90c for 5 hours, tray of water under.


    Then a thick baste of honey, soy sauce, BBQ sauce and salt, brushed on and under the grill at full burn until bubblin' and carmelized (a few minutes per side)

    Delicious crust and the meat falls off the bone.

    If was allowed to keep just one cooking machine, it would be a close-run thing between my Breville toasted sandwich maker and my convection oven... but I think the Breville would win.

    I've really got the hang of it now... last night it was the classic cheese and tomato combo with a side of beans.

    I nearly brought one last night, it was on clubcard special at only 1100 baht too with 'deep fill' trays.

    Then I thought of all the fat shaming from Eddie and caught a glimpse of my reflection on the cake display and put it back

    'Steady' is the expert on these, they're a staple up that part of the world and they're supposed to be great!

    Check if they have the Greggs cheese, sausage and baked bean bake. They are wonderful.
