    Food safety:- are rare burgers safe?

    I know a few members are keen on 'rare hamburgers', something which I don't find appealing
    and came across this article on the subject.

    3. Rare meat

    When cooking and reheating meat, there are some simple rules to follow. Whole pieces of meat muscle such as steak,
    pork and lamb can be cooked on the outside, say barbequed or pan fried, so they're still rare on the inside.

    Historically, under-cooked pork has been feared due to a parasitic worm, but this has never been seen in Australian pigs.

    Poultry and all minced, rolled, stuffed, tenderised and similar types of meat (including burgers) need to be cooked right through.
    This difference relates to where microorganisms are found on the meat.

    We know microorganisms live on the surface of raw meat because animals naturally harbour microorganisms.

    That's why just cooking the surface of a whole piece of muscle meat is sufficient (excluding poultry), because that will kill
    any potentially harmful bacteria.

    When that meat is minced, rolled, stuffed, mechanically tenderised or turned into patties or sausages, the surface of the
    meat and what it's carrying is then mixed through the whole product.

    It's also possible for chicken tissue to be colonised by bacteria (which just doesn't happen with other animal meat types).

    That's why these types of meat products need to be cooked through to the centre.

    Fuck that shit, rare is solely reserved for good restaurants or steaks at home. I wouldn't dare order a rare burger but then again I rarely eat burgers.

    Throw the buns away! Too much carb. Yes, eating raw/rare might be OK if I had done the kill myself. Otherwise there is way too much chance of some nasty contamination getting into it somewhere along the distribution chain.

    Steak tartare, based on raw minced steak, is perfectly okayso I don't know why a rare minced steak burger shouldn't be. All depends on the supplier.

    Throw the buns away and serve the burger in the pic as nachos. Can't eat a burger that messy anyway.

    If you got a local butcher with fresh beef that he grinds while you wait rare burgers are OK, everything else you gotta cook the ecoli out of it. Or buy a sirloin and grind it yourself.

    These are the answer to the Op's question. I buy all my meat from a local butcher shop and would not hesitate to cook their burger to rare if I preferred to eat it that way which I don't. I think a burger is best served at medium. Steak however is another story.

    Probably more about processing and storage problems than origin.

    Whattaburger had a big ecoli problem a few years back, I think the FDA outlawed selling rare cooked burgers after that.

    yep, that's the main point as steaks can be rare on the inside as long as the germs are killed on the outside of the steak (the germs can't enter inside a beef steak).

    of course, with ground meat, the germs distribute throughout.

    That does seem to be the take message from the OP.

    But some like their patties rare, and it seems to work for them ... not me though

    My Aussie imported Angus burgers are 80% cooked and then snap frozen.

    Your choice about how you wish to cook them but I take them out of the wrapper, throw them on to a frying pan for a minute or two either side and job done.

    I've actually left them in the sealed packaging when frozen and microwaved them for 4 minutes and they come out perfectly.

    I personally like the burgers browned off a little by frying in it's own juices but yes straight from the freezer, toasted buns under the griller and in three minutes delicious Aussie Beef burgers.

    I actually cut up some red onions and fry them until translucent and then throw the frozen burgers on top.

    New Years 2002. Outback steak house, puked and shit myself for 2 days. GF called the health dept, turned out alot of customers got sick, the place got shut down for a week or 2.

    Don't remember ever getting sick from a burger though.....knocking on wood.

    The last burger I had was this past January in Kanchanaburi. I can't remember if it was rare or well done. I do recall it pairing well with the two big bottles of Singha I had.

    I can't even remember the last burger I've had...

    I usually order them medium rare, if I'm asked, which as rare as I get a burger medium rare....usually medium or beyond.

    Meat eaters live longer than vegetarians anyway. So have your meat the way you like it.
