I could have put all the meat into one sandwich, that's true. Maybe some pepper too. Probably should have cooked some onions and thrown them in. A better bit of bread perhaps (although a very simple white bloomer or similar does wonderfully well with the right ingredients).
But, the tomato and lettuce have no place in a mandwich

The wife generally cooks with red onions, but I've never found them preferential over the classic English onion.

Bottom of the bun, slathered it with barbecue sauce warmed the top half of the bun in the pan. Damn nice.
