    Troy's Prawn Spaghetti

    This is another one of the wife's favourites and very quick and simple to cook. It is based on a recipe for Vongole.

    The ingredients:

    I picked one of those onion & coriander bunches from the market for 10 baht. You can use parsley and half an onion if you like. The prawns were the last offerings from Tesco-Lotus. I shell them for this dish as I hate peeling prawns when eating. These ones were too small to show off anyway. I like to add a chilli for this dish as it really enhances the flavour. If it seems like too much then add half and try.

    Chop , cut and peel to get this and then you're ready to start cooking:

    The cooking time is just about as long as it takes for the spaghetti so throw some into a pan of salted boiling water.

    In another pan add some olive oil and the chopped chilli. Let it cook a couple of minutes before adding the onion...

    Once the onion has softened, add the cherry tomatoes and garlic. I either leave the tomatoes whole or halve or quarter them depending on size. These ones were halved.

    Add salt and pepper and cook a couple of minutes until the tomatoes have softened a touch and then add some wine and water. I tend to add 1 part white wine to 2 parts water so I have a little more wine to drink. Here I have added 1 glass of wine and 2 glasses of water

    Now stick a lid on and let this simmer until the spaghetti is 5 minutes away from being cooked. Cooking time for the spaghetti I am using is 11 minutes so it isn't going to be simmering long. Add the Prawns and coriander or parsley

    Stick the lid back on and let simmer. Once spaghetti is cooked, drain and add. Give it a good stir around and serve immediately

    Agree but I think I see garlic chopped in the photo. For me that dish just begs garlic lots of garlic rarely too much.

    ^ Apologies, two cloves of garlic as per the first photo and added with the tomatoes. You can add more if you like but, for me, the chili brings out the flavours in this dish.

    That looks so nice, I may adapt it with parsley and an anchovy or two... Really nice fresh pasta meal, such a pity its so hard to get fresh pasta here.

    My bad... shit eyesight (didn't see the garlic) and also didn't explain it well.

    What I meant was my version's actually called 'Garlic shrimp Pasta'. Excuse the slight threadjack but pics from t'other thread:






    So more like a garlic sauce really.

    Have to say though, your finished product looks a lot better and more appetizing than mine comes out.

    ^ Interesting idea, but I think I'll stick to cooking my pasta separately in salted water thank-you.

    I would say there was nothing right about that one-pot dish at all, but that's just my opinion.

    I thought the same, but I had a go at it and it did indeed turn out silky smooth as the fella in the video described it. If I were to add prawns though I'd cook them separately.

    Have been inspired, might do similar this weekend. Do a similar dish to this, but with more garlic and a big pack of bacon (fried) as opposed to shrimp.


    Doing a adding bell pepper to the cherry tomatoes (and some wine) and roasting would also be an option.

    ^ That bake looks great Luigi! I would love to do a sausage and potato bake but I can't find any decent sausages locally. Looks like I'll have to wait until I go to Udon before treating myself.
