    Corned silverside

    I'm just back from the land of big tits and solid shits (awsralya) brought back a couple of vacuum packed Corned silversides which I haven't had in years. Can Google ways to do it but I thought I woould run it past the foodies on here first. For ideas. Particularly interested in what to serve it with. I'm thinking a bread sauce and cabbage? Feel free to throw up some ideas. They are only small about 1 kgl but the wife won't eat it so I will probably get a couple of meals from each

    I make my own and serve it with mash potato, steamed cauiliflower, steameed broccoli and steamed brussel sprouts... drizzle it all with cheese sauce.

    Lush as fuck.

    CSFFan. Silversides just a cut of beef from the hind quarter. Usually cred in brine. Damn tasty is to . Maybe you know it in the states as brisket? Pretty sure I got to boil it? Will bung up some pics when the jobs done. Hoping Headworx will habve some advice regarding th3 cooking and the accompaniments (fook big word)

    good suggestion. I can get Brussels sprouts in the minImart (frozen) love them fuckers. Underrated veggie for sure

    I'd go with Reuben sandwiches for some of it, then a meal with steamed cabbage with just a touch of apple cider vinegar on the cabbage.

    Mince up some, fry it with some taters and onions and serve over bread with grilled tomatoes.

    Really? I am so envious as that is my favorite part of the state. I love the hoh river trail and spent a lot of time in Neah Bay. There is a reason I am living here and Baitongboy would understand....

    I LOVE Silverside, and this is the way I roast it:
    Put it in a roasting tray (make sure it sits in it's own juices) covered in sliced onions. Pack all the way round the outside with quartered potatoes (or whatever size you prefer your roasties!). Cover it all the way round with tin foil (shiny side in) so that some air can circulate. Bung it in the oven on whatever heat I usually cook at (170) for 1hr 30/40mins then uncover and pop back in for 20/30mins so that it makes up a total of 2hrs in the oven. Hey presto, wonderfully juicey and tender beef. Of course, I don't know what size you have but this is a medium sized bit. Good luck
