Frijoles Negros Refritos – Refried Black Beans
Dead easy and delicious. I made half a batch so double if you want more.
One half package of dried black beans
One onion
2 cloves garlic
Bunch of cilantro
Olive oil
Salt
Cumin
Chili powder
Soak the beans overnight.
Rinse and set aside. Add half a tsp of cumin to a tbls of olive oil over medium heat. Add half a chopped onion then a chopped clove of garlic. Saute until translucent. Add the drained beans. Cover with water and simmer partially covered for two hours. After two hours add a tsp of salt and a handful of chopped cilantro. Cook uncovered for another half hour.
In a large frying pan sauté half a chopped onion, one chopped clove of garlic in olive oil. Add a tsp of cumin and a tsp of chili powder. Add the beans and stir over medium heat until reduced.
Garnish with chopped cilantro and chopped scallions.
