    Refried Black Beans

    Frijoles Negros Refritos – Refried Black Beans

    Dead easy and delicious. I made half a batch so double if you want more.

    One half package of dried black beans
    One onion
    2 cloves garlic
    Bunch of cilantro
    Olive oil
    Salt
    Cumin
    Chili powder

    Soak the beans overnight.
    Rinse and set aside. Add half a tsp of cumin to a tbls of olive oil over medium heat. Add half a chopped onion then a chopped clove of garlic. Saute until translucent. Add the drained beans. Cover with water and simmer partially covered for two hours. After two hours add a tsp of salt and a handful of chopped cilantro. Cook uncovered for another half hour.
    In a large frying pan sauté half a chopped onion, one chopped clove of garlic in olive oil. Add a tsp of cumin and a tsp of chili powder. Add the beans and stir over medium heat until reduced.
    Garnish with chopped cilantro and chopped scallions.

    Excuse my culinary ignorance H but what is cilantro and scallions? Or can someone translate into strayan.

    ^ Cilantro is a leafy herb sorta looks like parsley. Staple in South American foods. A necessity.

    No idea where Humbert got fresh cilantro in Thailand

    I brought a big bag of masa harina with me from the States. I'm using an old chipati press to make corn tortillias. Your refried beans will go great with them!

    Fair point. I wanted to make this thread about refried beans.
    I'm making chicken fajitas later today and was going to include the beans as a side. I was going to post that effort in the Dinner thread.

    Its called Pok Chee here and available everywhere. Thai's eat as much of it as do the Mexicans...

    Every market has it.... Pak Chee is the Thai name.

    ^^ Nope. Celery looks similar but leaves are bigger. Parsley doesn't smell anything like cilantro/corriander.

    Well yeah I was born in Texas so lots of Mexican food but I never cooked the stuff - that's what Mexicans are for

    Know what cilantro is and smells like, been through the local market by mi casa sniffing herbs like an idiot but never found any

    Anyway I'll try the Pak Chee when I get home.
