Ingredients
-3 tbls olive oil
-4 cloves minced garlic
-2 chopped med yellow onions
-1 chopped bunch of local celery
-I chopped green pepper (capiscum)
-2 tsp ground chili
-1 tsp cinnamon
-1 tsp ground cumin
-1 tsp oregano
-1 knnor chicken cube stock
-2 tsp salt
-500 g ground bottom round/rib eye
-250 g ground pork
-1 can crushed tomatoes
-1 sm can tomato paste
-1 can kidney beans
-1 cup red wine
-1 can water
-1 tbls flour
garnish
-fresh chopped cilantro/corriander
-chopped onions
-grated cheddar cheese
-sour cream
Saute the garlic, onions, celery and green pepper in olive oil until soft. Remove and set aside.
Brown the ground beef and pork. Add the chili, cumin, cinnamon and the Knnor cube. Add 1/4 cup of water and cook a few minutes.
Add the sauteed veggies back in. Add the kidney beans, crushed tomatoes, tomato paste, wine and water. Mix and bring to a boil.
Turn on to simmer and add the flour. Simmer for 2-3 hours.
