    Humbert's Diner Chili

    Ingredients
    -3 tbls olive oil
    -4 cloves minced garlic
    -2 chopped med yellow onions
    -1 chopped bunch of local celery
    -I chopped green pepper (capiscum)
    -2 tsp ground chili
    -1 tsp cinnamon
    -1 tsp ground cumin
    -1 tsp oregano
    -1 knnor chicken cube stock
    -2 tsp salt
    -500 g ground bottom round/rib eye
    -250 g ground pork
    -1 can crushed tomatoes
    -1 sm can tomato paste
    -1 can kidney beans
    -1 cup red wine
    -1 can water
    -1 tbls flour

    garnish

    -fresh chopped cilantro/corriander
    -chopped onions
    -grated cheddar cheese
    -sour cream



    Saute the garlic, onions, celery and green pepper in olive oil until soft. Remove and set aside.



    Brown the ground beef and pork. Add the chili, cumin, cinnamon and the Knnor cube. Add 1/4 cup of water and cook a few minutes.



    Add the sauteed veggies back in. Add the kidney beans, crushed tomatoes, tomato paste, wine and water. Mix and bring to a boil.



    Turn on to simmer and add the flour. Simmer for 2-3 hours.

    Kick back and wait.

    Looks delicious might give it a go tomorrow always enjoyed it in Florida
    Indeed where do you find sour cream , I live in the sticks have access to Lotus and a drive to Big C Tops or Makro but never seen it or do you make it from regular cream? I can buy boxed Danish cream here.

    Looks really nice indeed. So you prefer the kidney beans over pinto beans? Also glad to see you use regular beef and not just ground.

    Never had it that way except when I was in grade school and they served it in the cafeteria. Too old to change now.

    It looks very nice but I have to ask why the flour at the end?

    It would thicken on its own with enough simmering and if you are going to add flour to something like that it should be done as a roux like a gumbo.

    Looks great. Cinnamon seems an odd ingredient in a dish like that.
    Is it easy to get fresh kydney beans there where you are?
    I prefer them by a mile to the tinned ones.

    I read about it and thought I'd give it a try this time. Seemed to give it a slightly creamier texture. Some recipes call for using masa harina during cooking.

    Cinnamon is a great addition. Gives it a nice smoky flavor. I've seen it used in several recipes. I keep varying things over the years and this is the version that I am happiest with.

    It's similar but eliminate the cumin, cinnamon, ground chili and beans.
    In Cinncinnati, Ohio Skyline Chili has built a big business serving their chili over spaghetti. I always thought it a bit weird but it kind of grew on me when I lived there.

    Such sauces are great to freeze..nuke, chuck in additional ingredients at will to taste....can be used in so many dishes..Lasagna, Shepherds pie or even in one of Loy Toy's world famous pies as filler. Would be good in the Thai version of Chinese Cha Siu Bao pork buns also...,

    Dried ones is what I meant.
    Just make sure they get a good ten minute boil during the cooking process......
