So, went & got a chunk of beef and a piece of pork shoulder.
Beef sits in the fridge, salt-rubbed, the pork will soak in broth til tomorrow:
Actually, I got some venison as well, but will first do a test-run to get my bearings. Invited some victims to try the first batch tomorrow night.

Yes, I've done it before, around 6 hours I'd guess, but running out of time, had a few chores this morning and started late. Also, this smoker doesn't seem to heat up as the other one, prolly great for cold-smoking bacon and fish. Bit early to tell, this is the trial run.Originally Posted by CSFFan

Rushed it in the end, took out the dripping pan and BBQed with charcoal for the last stretch.
Discovered that the temperature gauge is useless and overdone the pork a bit, still very tasty though. The smoke flavour was dominant, also the brine hadn't soaked through the pork long enough. There is quite a bit of room for future improvements....
Looked like this before serving, no, it's not burned, the colour is from the smoke.

A mate with his recently arrived Thai bird came over, she'd been missing Thai food, so I had prepared a huge bowl of Yam Winsen for starters. Fusion: included Mango and German Bockwurst, went down a treat.
